Spinach Balls
Recipe from Priscilla Eller
Ingredients:
- 2 (10 oz) packages frozen, chopped spinach
- 3 cups herb seasoned stuffing mix
- 1 large onion, finely chopped
- 6 eggs, beaten
- ¾ cup margarine, melted
- ½ cup grated Parmesan cheese
- 1 tsp. back pepper
- 1½ tsp garlic salt
- ½ tsp thyme
Directions:
- Cook spinach, drain and squeeze to remove excess moisture
- Mix spinach and remaining ingredients
- Use ice cream scoop to scoop spinach mixture and make into balls
- Place on lightly greased baking sheet
- Optional: freeze on baking sheet. After frozen, move to zip lock bag
- Bake at 325° for 15 to 20 minutes
